If the AI creates an background that is ideal apart from one or two details, you can use Retouch to make it perfect. Retouch lets you remove selected parts of the background.

2 side-by-side images. The left image shows a lotion bottle in a beach scene with an island in the background. Right image shows the same, but with the island removed and replaced by sky.

The left image shows an island in the background (1). In the right image, the island has been erased by using Retouch (2).

Retouch for AI Backgrounds works by analyzing the pixels in the selected area and those surrounding it. The AI then redraws that part of the image, gradually replacing the image in the selected area with pixels from outside it. You may need to use Retouch several times over an area to get the effect you want.
